Deliciously crispy squash fritters are a simple and tasty way to enjoy summer squash surplus. Serve warm with a dollop of sour cream on top.
Ingredients:
  • 5 yellow squash, grated
  • 3 tablespoons grated onion
  • 3 tablespoons all-purpose flour
  • 1 egg, beaten
  • 0.125 teaspoon baking powder
  • 0.125 teaspoon salt
  • 2 tablespoons butter, or more as needed
  • 0.25 cup shredded Cheddar cheese, or to taste
  • 0.25 cup chopped onion, or to taste
  • 0.25 cup sour cream, or to taste
Instructions:
  • *Prepare the grated squash by placing it in a colander and firmly squeezing out any excess water until you have approximately 1 cup of grated squash.*
  • Place the squash in a bowl and combine with onion, flour, egg, baking powder, and salt, mixing thoroughly to create a batter.
  • Heat butter in a large skillet over medium-high heat until melted. Spoon batter into the skillet and use a large spoon to flatten fritters to 3 to 4 inches wide and 1/4 to 1/8 inch thick. Cook until edges turn deep brown, approximately 1 minute. Flip and cook for another 30 seconds. Place cooked fritters on a paper towel-lined plate and lightly sprinkle with salt. Repeat with the remaining batter, adding more butter to the skillet as needed.
  • Top the dish with warm Cheddar cheese, onion, and sour cream before serving.
