Indulge in crispy butternut squash fritters as a delicious alternative to potato pancakes. Easy prep with frozen squash spirals.
Ingredients:
  • 1 (12 ounce) package Green Giant Veggie Spirals® Butternut Squash, thawed
  • 0.5 cup all-purpose flour
  • 0.25 cup grated Parmesan cheese
  • 2 large eggs, lightly beaten
  • 2 tablespoons chopped fresh sage
  • Salt and ground black pepper to taste
  • 2 tablespoons olive oil
Instructions:
  • Pat dry Green Giant Veggie Spirals® Butternut Squash with paper towel to remove excess moisture. Mix together butternut squash, flour, Parmesan cheese, eggs, and sage in a large bowl. Season with salt and pepper and stir gently until just combined.
  • In a large nonstick skillet over medium heat, heat the olive oil. Cook 4 pancakes using about 3 tablespoons of batter per pancake, flipping once, until golden brown for about 6 minutes. Repeat the process with more oil and batter.
  • Place pancakes on a paper towel-lined plate to drain.
  • Top pancakes with a dollop of plain Greek yogurt or sour cream, to taste.
