Delicious squash fritters pair perfectly with fresh salad for a satisfying vegetarian dish.
Ingredients:
  • 6 yellow squash
  • 240g fresh ricotta
  • 49.50 gm self-raising flour
  • 82.50 ml grated parmesan (or vegetarian hard cheese)
  • 41.20 gm milk
  • 40.00 ml chopped basil leaves
  • 36.40 gm Brand Pure Olive Oil
  • 120g baby spinach & rocket leaves
  • 400g can chickpeas, drained, rinsed
  • 1 avocado, chopped
  • 36.40 gm Extra Virgin Olive Oil
  • 21.00 gm lemon juice
Instructions:
  • Grate 4 squash pieces. In a large bowl, whisk together ricotta and egg until smooth. Add the grated squash, flour, parmesan, milk, and basil. Mix well to combine. Season to taste.
  • In a large non-stick frying pan over medium heat, heat half of the olive oil. Cook 2 tbsp portions of squash mixture for 5 minutes on each side or until golden, adding the remaining olive oil between batches.
  • Thinly slice the rest of the squash and mix it with salad leaves, chickpeas, and avocado in a bowl. Combine extra virgin olive oil and lemon juice in a small bowl, then drizzle over the salad. Season to taste.
  • Pair the fritters with the salad.
