Crispy summer squash fritters - a delicious side dish for any meal!
Ingredients:
  • 2 cups seeded, grated summer squash
  • 0.5 cup all-purpose baking mix (such as Bisquick®)
  • 0.33333334326744 cup milk
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon butter, melted
  • 1 pinch garlic and herb seasoning, or more to taste
  • 0.33333334326744 cup oil for frying, or as needed
Instructions:
  • Combine grated squash, baking mix, milk, egg, Parmesan cheese, butter, salt, pepper, and garlic-herb seasoning in a large bowl, blending all ingredients thoroughly.
  • In a large skillet over medium heat, heat oil. Spoon batter by the tablespoon into the hot oil, keeping them about 1 inch apart. Cook for 1 ½ to 2 minutes, flip, and cook until the second side is lightly browned. Drain on a plate lined with paper towels. Repeat with the rest of the batter, adding more oil to the skillet as necessary.
