Elevate your lunchbox with this modern zucchini slice twist.
Ingredients:
  • 250.00 ml dried wholemeal spiral pasta
  • 500g zucchini
  • 3 green onions, thinly sliced
  • 125g sliced leg ham, sliced
  • 250.00 ml pizza cheese
  • 2 x 125g cans corn kernels, drained
  • 112.50 gm self-raising flour
  • 4 eggs, lightly beaten
  • 75.90 gm vegetable oil
  • 84.98 gm milk
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, ensuring the paper extends 2cm above the edges on both sides.
  • Prepare pasta according to package instructions in a pot of boiling salted water. Once cooked, rinse under cold water then drain.
  • Gently squeeze out liquid from zucchini. Mix zucchini, pasta, onion, ham, cheese, corn, and flour in a bowl. Add egg, oil, and milk. Season with salt and pepper. Combine thoroughly. Spread mixture in the pan. Bake until golden and set, about 25 minutes. Rest for 15 minutes before serving.
