Simplify dinner with this easy, flavorful spicy chicken tikka recipe.
Ingredients:
  • 2 pounds skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons minced fresh ginger root
  • 2 teaspoons ground cumin
  • 2 teaspoons ground black pepper
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper, or to taste
  • 2 tablespoons olive oil, divided
  • 1 large onion, chopped
  • 1 jalapeno pepper, seeded and minced
  • 5 cloves garlic, minced
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
Instructions:
  • In a bowl, mix together chicken, 1 cup heavy cream, lemon juice, ginger, cumin, pepper, cinnamon, salt, and cayenne pepper. Refrigerate and let marinate for at least 1 hour.
  • Once the chicken is marinated to perfection, heat up 1 tablespoon of oil in a large pan over medium heat. Sauté the onion, jalapeno, and garlic until they are softened, which should take about 5 minutes. Stir in the tomato sauce and tomato paste, bring it to a boil, then let it simmer on low heat.
  • In a separate skillet, heat more oil over medium to medium-high heat. Cook and stir chicken until golden and cooked through, about 7 to 10 minutes. Adjust sauce consistency by adding additional heavy cream if desired for a light red sauce. Simmer for 10 to 15 minutes to blend flavors. Serve and enjoy!
