Chef John's irresistible apple dumplings feature a divine brown sugar sauce with just 3 ingredients. Deliciously simple!
Ingredients:
  • 1 teaspoon butter, or as needed
  • 1.5 cups packed light brown sugar
  • 3 tablespoons butter
  • 1 cup cold water
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon
  • 4 small Honeycrisp apples
  • 1 recipe prepared pie crust dough
  • 4 teaspoons butter
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously butter a baking dish.
  • In a small pot over medium-high heat, mix brown sugar, 3 tablespoons of butter, and water. Let it come to a boil, stirring occasionally, until the sugar is completely dissolved. Remove from heat and gently swirl the pot to combine. Set the sauce aside for later use.
  • In a small bowl, mix together the sugar and cinnamon. Core the apples without peeling them.
  • Divide the pie dough into 4 portions and roll each out on a lightly floured surface into 4 circles that are 1/8-inch thick and 7 inches in diameter, or big enough to completely wrap an apple.
  • Fill the center of each round of dough with apples, sprinkle 3 teaspoons of cinnamon sugar into the apple cores, and top each with a teaspoon of butter.
  • Wrap each apple in pie dough, sealing the top without stretching too tightly. Add a touch of water if needed to secure the dough. Trim any excess and create decorative leaves if desired.
  • Arrange the wrapped apples seam-side up in the buttered baking dish, then generously spoon sauce over each to ensure they are fully covered.
  • Roast in the preheated oven, brushing with sauce intermittently, until pastry is golden and apples are soft, for 50 to 60 minutes. Take out of the oven, brush with extra sauce, and serve while warm.
