Chef John enhances apple flavor and texture by cooking apples first, and opts for sparkling apple cider for a lighter apple fritter.
Ingredients:
  • 2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
  • 1 tablespoon white sugar
  • 1.25 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground ginger
  • 0.125 teaspoon ground nutmeg
  • 1 large egg
  • 1 tablespoon melted butter
  • 0.5 cup sparkling apple cider
  • 2 cups vegetable oil for frying
  • 0.5 cup confectioners' sugar, or more as needed
  • 1 tablespoon sparkling apple cider, or as needed to make glaze
Instructions:
  • Assemble all ingredients.
  • In a skillet, melt butter over medium-high heat and cook until it reaches a rich golden brown color, approximately 2 to 3 minutes.
  • Cook the apples over medium-high heat until they just start to soften around the edges, for about 3 to 4 minutes. Next, sprinkle in 1 tablespoon of sugar and cook for an additional 2 minutes. Once done, remove from heat, strain, and allow it to cool to room temperature.
  • Combine flour, baking powder, salt, cinnamon, ginger, and nutmeg in a mixing bowl and whisk until thoroughly mixed.
  • Combine egg, 1/4 cup sugar, and melted butter in a separate mixing bowl and whisk until well blended.
  • Gently fold in chilled apple pieces and fizzy apple cider, then add the flour mix. Stir until just combined.
  • Preheat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Drop 2 tablespoons of batter per fritter into the hot oil, gently flattening them. Cook in batches, frying until small bubbles form on one side for about 2 minutes. Flip carefully and fry the other side until golden brown for another 2 minutes.
  • Place the cooked items on a paper towel-lined plate to drain excess grease. Allow them to cool slightly before adding the glaze.
  • Combine powdered sugar and cinnamon in a mixing bowl. Gradually mix in apple cider, 1 teaspoon at a time, until a smooth, drizzle-worthy glaze forms. Drizzle over fritters and enjoy!
