Master Chef's BBQ chicken: Tender & juicy with a caramelized sticky glaze. Goodbye burnt coating, hello perfection.
Ingredients:
  • 1 whole chicken, cut into halves
  • 0.25 cup rice vinegar
  • 2 tablespoons barbecue sauce
  • 2 cloves garlic, crushed
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 0.5 cup barbecue sauce, or as needed
Instructions:
  • Score the skin-side of each chicken half with 1/2-inch deep cuts: make two cuts on each breast, two on each thigh, and one on each leg. Discard wing tips.
  • In a large bowl, combine vinegar, 2 tablespoons of barbecue sauce, and garlic, whisking until well blended. Add chicken to the bowl and toss to coat. Place chicken halves cut side down in the bowl, cover with plastic wrap, and refrigerate for 1 hour.
  • Preheat your outdoor grill to medium-high heat and give the grate a light coating of oil.
  • Take the chicken out of the bowl and gently dry it with paper towels. Dispose of any leftover marinade. Place the chicken halves on a plate, skin-side up, and generously season with salt, pepper, paprika, onion powder, and cayenne pepper.
  • Grill chicken skin-side down until grill marks appear, about 3 to 4 minutes. Flip chicken, baste with barbecue sauce every 6 minutes, close the lid, and cook until no longer pink at the bone, juices run clear, and internal temperature reaches 165°F (74°C), approximately 35 minutes.
