Chef John's twist on barbecue meatloaf: Bake the loaf on top of the glaze for a delicious twist!
Ingredients:
  • 1.75 pounds very cold ground beef
  • 1.5 teaspoons salt
  • 1 teaspoon garlic powder
  • 0.5 teaspoon celery salt
  • 0.25 teaspoon chipotle chile powder
  • 1 pinch cayenne pepper
  • 0.5 cup fine, dry breadcrumbs
  • 1 egg, beaten
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 0.25 cup barbeque sauce (such as SFQ®), or to taste
Instructions:
  • Preheat the oven to a toasty 325°F (165°C).
  • Combine ground beef, salt, garlic powder, onion powder, black pepper, celery salt, chipotle chile powder, and cayenne pepper in a bowl, then mix together with your hands. Add bread crumbs, egg, ketchup, mustard, and Worcestershire sauce; mix until well combined. Shape into a loaf.
  • Coat the bottom of a loaf pan with barbecue sauce. Spread the meat mixture on top of the sauce and firmly press it into the pan.
  • Roast in the oven until fully cooked through, approximately 1 hour and 15 minutes. Check for doneness by inserting an instant-read thermometer into the center; it should register at least 160 degrees F (70 degrees C). Remove meatloaf from the pan, drain any excess fat, and flip it onto a plate. Allow it to rest for 5 minutes before cutting into slices.
