Chef John's Best Mushroom Gravy

Savory mushroom gravy with fresh mushrooms, beef stock, thyme, and black pepper pairs perfectly with meatloaf or roasts.
Ingredients:
  • 0.25 cup butter
  • 1 (16 ounce) package sliced mushrooms
  • salt to taste
  • 0.25 cup all-purpose flour, or as needed
  • 1 quart beef stock
  • 1 pinch ground black pepper to taste
  • 1 pinch fresh thyme leaves, to taste
Instructions:
  • In a saucepan, melt butter until it foams over medium heat. Add mushrooms, season with salt, and simmer until liquid evaporates, approximately 20 minutes.
  • Combine flour into the mixture and cook for 5 minutes. Pour in 1 cup of beef stock while stirring vigorously until well combined, then add the remaining stock and mix well. Season with black pepper and thyme. Simmer over medium-low heat until thickened, stirring frequently, for about 30 minutes.
