Chef John's simple honeycomb candy is both crispy and sweet, made with sugar, corn syrup, honey, and baking soda.
Ingredients:
  • 2 tablespoons corn syrup
  • 1 tablespoon honey
Instructions:
  • Prepare all your ingredients.
  • Prepare your baking dish by lining it with parchment paper. Measure out the baking soda into a small bowl and have a heat-proof spatula on hand before you begin.
  • Combine sugar, corn syrup, water, and honey in a saucepan with a candy thermometer attached. Heat over medium heat until the mixture is thin and cloudy. Cook until clear and the thermometer reads 300°F (149°C).
  • Whisk baking soda into mixture off the heat until well combined.
  • Using a spatula, gently pour the mixture into the lined dish without spreading or compressing it. Allow it to cool completely for at least 30 minutes to maintain the bubbles.
  • Lift parchment paper with candy out of the pan, tap on the counter, and break it into pieces using your fingers.
