Chef John's Cauliflower Pizza Crust

Create gluten-free cauliflower pizza crust using Chef John's fabulous recipe for your friends.
Ingredients:
  • 1 head cauliflower, cored and separated into florets
  • 0.5 cup water
  • 0.5 teaspoon salt
  • 1 large egg
  • 2 ounces fresh goat cheese
  • 0.5 ounce finely grated Parmigiano-Reggiano cheese
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  • Add the cauliflower to a food processor and pulse until it is finely ground.
  • Sauté cauliflower with water and salt in a large skillet over medium-high heat until fragrant and most of the water evaporates, about 5 to 6 minutes. Let it cool completely before proceeding.
  • Place the cauliflower in the center of a clean dish towel. Wrap it tightly and squeeze to remove excess moisture, resulting in approximately 1 1/2 cups of cauliflower pulp.
  • Mix cauliflower pulp, egg, goat cheese, Parmigiano-Reggiano cheese, and cayenne pepper in a bowl until a soft dough forms. Shape into a ball and transfer to the center of the baking sheet. Flatten into a 1/4-inch thick circle.
  • Bake in the preheated oven for 40 minutes until golden brown. Allow to cool, then flip the crust over before adding toppings.
