Enjoy healthy boneless baby back ribs inspired by the iconic McRib® sandwich: slow-baked, chilled, and grilled to perfection by Chef John.
Ingredients:
  • 0.33333334326744 cup kosher salt
  • 0.25 cup brown sugar
  • 2 tablespoons chili powder
  • 2 tablespoons freshly ground black pepper
  • 1 tablespoon ground cumin
  • 1 teaspoon cayenne pepper
  • 2 racks baby back pork ribs
  • 1 cup barbecue sauce, divided
  • 4 sesame hamburger rolls, split and toasted
  • 1 cup coleslaw
Instructions:
  • Preheat your oven to 325°F (165°C).
  • Combine salt, brown sugar, chili powder, pepper, cumin, and cayenne to create a flavorful rub.
  • Lay the ribs on a foil-lined baking sheet and generously season both sides with some of the rub, saving the rest for later. Place parchment paper on top and tightly wrap the edges with foil. Finally, cover the entire sheet with another large piece of foil, ensuring the edges are sealed.
  • Roast in the preheated oven until perfectly tender, for approximately 2 hours and 45 minutes.
  • Allow ribs to cool to room temperature. Carefully remove the bones, tucking any loose meat back in place and ensuring there are no bone fragments. Rewrap the ribs and chill in the refrigerator for 8 hours to overnight.
  • Cut the rack in half and generously brush both sides with barbecue sauce.
  • Heat up your charcoal grill until it's nice and hot, then lightly oil the grate before getting started.
  • Grill ribs for 3 to 4 minutes on each side until heated through. After grilling, coat with extra barbecue sauce for added flavor.
  • Drizzle extra barbecue sauce over each roll. Place a rib section in each roll and add coleslaw on top.
