Indulge in homemade maple granola filled with nuts, seeds, and dried fruit - perfect for snacking or breakfast.
Ingredients:
  • 0.25 cup packed brown sugar
  • 3 tablespoons maple syrup
  • 2 tablespoons vegetable oil
  • 1.5 cups rolled oats
  • 0.5 cup chopped almonds
  • 0.5 cup raw pumpkin seeds
  • 0.33333334326744 cup shredded coconut
  • 0.5 cup dried currants
Instructions:
  • Heat the oven to 250°F (120°C) and prepare a baking sheet with a silicone liner.
  • In a bowl, mix together brown sugar, maple syrup, oil, and salt. Add oats, almonds, pumpkin seeds, and coconut. Stir until everything is well coated.
  • Spread the mixture evenly onto the prepared baking sheet.
  • Bake in the preheated oven, gently stirring every 10-15 minutes with a fork, until perfectly toasted and golden brown, approximately 1 hour.
  • Take the granola out of the oven. Pour the warm granola into a large bowl and stir in the currants. Allow it to cool to room temperature, approximately 30 minutes.
