Indulge in Chef John's irresistible granola oatmeal cookies - a taste sensation like no other!
Ingredients:
  • 1 cup finely crumbled prepared granola
  • 0.75 cup all-purpose flour
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 cup unsalted butter, softened to room temperature
  • 0.5 cup firmly packed light brown sugar
  • 0.25 cup white granulated sugar
  • 1 large egg
  • 0.75 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 0.5 cup old-fashioned rolled oats
Instructions:
  • First, collect all the necessary ingredients. Next, preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with a silicone baking mat (like Silpat™) or parchment paper.
  • In a bowl, whisk together flour, salt, baking powder, and baking soda for 30 seconds until fully combined.
  • In a separate bowl, cream together butter, light brown sugar, and granulated sugar using an electric beater until light and fluffy. Mix in the egg until well combined, then add vanilla extract and cinnamon and beat until incorporated.
  • Combine the egg into the mixture using high speed until well incorporated, then blend in the vanilla extract and cinnamon.
  • Gently mix dry ingredients with a spatula until flour is fully incorporated.
  • Incorporate granola and oats until fully mixed.
  • Spoon out tablespoon-sized portions of dough onto the baking sheet, ensuring to leave enough space between each ball for them to expand while baking, approximately 8 per sheet.
  • Bake the cookies on the center rack in the preheated oven until they turn golden brown, about 13 to 15 minutes. Allow them to cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Repeat with the rest of the dough.
  • Place the cookies on a wire rack to cool completely before continuing with the rest of the dough.
