Whip up delicious cranberry pecan oat bars with chocolate chips for a convenient and tasty snack on-the-go.
Ingredients:
  • 2 cups quick-cooking oats
  • 1 cup dried cranberries
  • 1 cup pecan halves
  • 0.5 cup ground flax seed
  • 0.5 cup milk chocolate chips
  • 0.25 cup wheat germ
  • 1 cup packed light brown sugar
  • 0.5 cup honey
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and elegantly line an 8-inch square baking dish with parchment paper or waxed paper.
  • Combine oats, cranberries, pecans, ground flax seed, chocolate chips, and wheat germ in a bowl, stirring until well mixed.
  • Combine brown sugar, honey, vegetable oil, and salt in a large microwave-safe bowl. Microwave for 30 seconds, then stir. Continue to microwave in 30-second intervals until smooth. Mix in vanilla extract and cinnamon.
  • Combine the brown sugar mixture with the oats until well mixed and the chocolate is completely melted. Transfer the mixture into the baking dish.
  • Bake in the preheated oven for around 30 minutes until the edges turn golden brown. Use the parchment paper to easily lift the bars out of the pan. Let them cool for 5 minutes before cutting them into bars.
