Whip up a festive cranberry walnut quick bread, perfect for holiday gatherings.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup brown sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.25 cup butter
  • 0.75 cup orange juice
  • 1 egg, well beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon grated orange zest
  • 1.5 cups cranberries
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • Combine flour, white sugar, brown sugar, baking powder, baking soda, and salt in a large mixing bowl. Use a pastry cutter to blend in butter until mixture resembles coarse cornmeal.
  • Combine orange juice, egg, vanilla extract, and orange zest in a small bowl, then mix into the flour mixture until just moistened. Gently fold in cranberries and walnuts. Spread batter into the loaf pan, ensuring the edges are slightly higher than the center.
  • Bake in the preheated oven for about 1 hour or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
