Cranberry Nut Quick Bread

Fabulous cranberry walnut bread with a hint of orange.
Ingredients:
  • 2 cups sifted all-purpose flour
  • 0.5 teaspoon salt
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 orange, juiced and zested
  • 2 tablespoons butter, melted
  • 1 egg, beaten
  • 1 cup chopped walnuts
  • 1 cup cranberries, quartered
  • 1.5 cups confectioners' sugar
  • 3 tablespoons butter, softened
  • 1 tablespoon orange juice
  • 1 tablespoon milk
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C, then generously grease and flour a loaf pan.
  • In a spacious bowl, mix together flour, salt, baking powder, baking soda, and sugar.
  • Combine freshly squeezed orange juice and zest, melted butter, and boiling water in a 1-cup (or larger) measuring cup until it reaches 3/4 cup. Mix into the flour mixture, then gently fold in the egg, walnuts, and cranberries before pouring the batter into the prepared pan.
  • Bake in a preheated oven until a toothpick inserted in the center comes out clean, about 1 hour. Let the loaf cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Prepare the icing by mixing confectioners' sugar, butter, orange juice, and milk. Adjust the consistency by adding more milk until the icing is thin and slightly runny. Drizzle it over the bread and let it set before slicing.
