Create a vibrant cranberry orange bread with fresh chopped cranberries, walnuts, and citrus zest for a festive and flavorful holiday treat.
Ingredients:
  • 2 cups flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped fresh cranberries
  • 3/4 cup coarsely chopped walnuts
  • 3/4 cup orange juice
  • 3/4 cup granulated sugar
  • 1/4 cup butter, melted
  • 1 egg, beaten
  • 1 Tbsp orange zest
Instructions:
  • Preheat the oven to 350°F and generously butter a 8 1/2 x 4 1/2 or 9 x 5-inch loaf pan.
  • In a big bowl, stir the flour, baking powder, baking soda, and salt until well combined.
  • Mix together the orange juice, sugar, melted butter, egg, and orange zest in a medium bowl to create the wet ingredients.
  • Combine the orange juice and sugar with the flour mixture, folding gently until just blended. Be careful not to over-mix. Then gently fold in the cranberries and nuts.
  • Pour the batter into the pan and bake at 350°F for 50-55 minutes or until a tester inserted in the center comes out clean.
