Delicious cranberry nut tarts baked to perfection in a mini muffin pan. Ideal for parties and cookie trays.
Ingredients:
  • 0.5 cup butter, softened
  • 1 (3 ounce) package cream cheese, softened
  • 1 cup all-purpose flour
  • 1 egg
  • 0.75 cup packed brown sugar
  • 1 tablespoon butter, melted
  • 3 tablespoons chopped walnuts
  • 3 tablespoons chopped fresh cranberries
Instructions:
  • Combine butter and cream cheese in a medium bowl until smooth. Gradually mix in the flour until fully incorporated. Chill the dough covered in the refrigerator for 1 hour before using.
  • While the dough is chilling, prepare the filling by whisking together the egg, brown sugar, melted butter, and vanilla in a medium bowl. Then, stir in the cranberries and walnuts.
  • 1. Preheat your oven to a cozy 325 degrees F (160 degrees C). 2. Shape the dough into 1-inch balls and gently press them into the mini muffin cups, ensuring the dough covers the bottom and sides. 3. Spoon a generous teaspoon of the filling into each cup.
  • Bake in the preheated oven for 25-30 minutes until the tarts' edges are lightly browned.
