Buttermilk, honey, and orange zest-infused Irish soda bread, ideal for St. Patrick's Day or any occasion.
Ingredients:
  • 3.25 cups all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.25 cup rolled oats
  • 1.5 teaspoons salt
  • 1.25 teaspoons baking soda
  • 1 teaspoon baking powder
  • 0.25 cup cold unsalted butter, cut into small cubes
  • 1.75 cups buttermilk
  • 1 large egg
  • 2 tablespoons honey, or more to taste
  • 2 teaspoons grated orange zest
  • 1 cup dried currants
  • 0.33333334326744 cup golden raisins
Instructions:
  • Preheat the oven to a toasty 375°F (190°C) and prepare a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, blend flours, oats, salt, baking soda, and baking powder with a whisk. Use a pastry blender to cut butter into the mixture until it looks like coarse meal.
  • In a medium bowl, whisk together buttermilk, egg, honey, and orange zest until smooth. Pour the buttermilk mixture, along with currants and raisins, into the flour-butter mixture. Stir with a wooden spoon until a wet, sticky dough forms.
  • Transfer dough onto a generously floured surface and shape into 2 equal balls. Form each into a smooth, round loaf and place on the baking sheet. Allow to rest for 15 minutes, then score a 1/2-inch-deep "X" on top of each loaf using a serrated knife.
  • Bake until loaves turn golden brown and fragrant, around 45 minutes. Let them cool completely on a wire rack before slicing.
