Turkey fond-infused Thanksgiving gravy: Chef John's easy, velvety timesaving masterpiece.
Ingredients:
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 ribs celery, chopped
  • 2 teaspoons vegetable oil
  • 2 large turkey wings
  • 2 tablespoons cold water
  • 10 cups cold water
  • 4 sprigs fresh thyme
  • 2 cloves garlic
  • 3 tablespoons butter
  • 0.5 cup all-purpose flour
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • Collect all your ingredients and preheat the oven to 400°F (200°C).
  • Toss onion, carrots, celery, and oil in a large roasting pan until coated. Arrange turkey wings on top of the vegetables.
  • Roast in the oven until turkey wings are beautifully browned and vegetables are caramelized and tender, for 45 to 60 minutes.
  • Place the turkey wings and vegetables into a large stockpot.
  • Place the roasting pan on a medium-heated stovetop burner, add 2 tablespoons of cold water, and bring it to a boil while scraping up any browned bits.
  • Incorporate the mixture into the stockpot along with 10 cups of cold water, thyme, and garlic.
  • Bring the turkey wing mixture to a boil, then simmer on low, uncovered, for about 3 hours until the meat easily falls off the bone. Remember to skim off the turkey fat as needed, saving 2 tablespoons.
  • After straining the turkey stock, keep 6 cups of the flavorful liquid and discard all solid pieces.
  • In a large saucepan over medium heat, melt the butter and turkey fat. Whisk in the flour and cook for 2 to 3 minutes until it develops a cooked pie crust aroma.
  • Pour the turkey stock gradually while whisking continuously.
  • Turn up the heat to high and simmer the gravy until it thickens and warms through for about 5 minutes. Season generously with cayenne, salt, and black pepper.
