Chef John's Miso-Glazed Barramundi

Try Chef John's easy miso-glazed Barramundi for a delicious twist on a sustainable white fish.
Ingredients:
  • 2 tablespoons yellow miso paste
  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 2 (5 ounce) barramundi (Asian sea bass) fillets
  • 1 teaspoon vegetable oil
Instructions:
  • Combine miso paste, rice vinegar, brown sugar, and soy sauce in a bowl and whisk until the glaze is smooth and well blended.
  • Lay the barramundi fillets on a plate with the rounded side facing up, then generously spread half of the glaze on top of the fish.
  • 1. Heat oil in a nonstick skillet over high heat. Add fish with glazed-side down, spread remaining glaze on the other side, and cook until slightly white around the edges, around 1 to 2 minutes. Flip the fish and continue cooking until flaky and white, for another 1 to 2 minutes.
