Chef John's braised beef chuck harmonizes miso, sake, and maple syrup for a comforting autumn fusion.
Ingredients:
  • 1 (2 1/2 pound) boneless beef chuck roast, cut into 2-inch thick strips
  • 1 pinch cayenne pepper, or to taste
  • kosher salt and freshly ground black pepper to taste
  • 2 tablespoons peanut oil
  • 1 tablespoon butter
  • 3 king trumpet mushrooms, halved lengthwise
  • 1 medium yellow onion, diced
  • 0.25 cup sake
  • 0.5 cup chicken broth
  • 3 tablespoons yellow miso
  • 2 tablespoons maple syrup
  • 2 tablespoons ketchup
  • 1 tablespoon rice wine vinegar
  • 0.25 cup thinly sliced red chile pepper
  • 0.25 cup thinly sliced green onions
Instructions:
  • Sprinkle beef with zesty cayenne pepper, kosher salt, and pepper for a burst of flavor.
  • In a hot pan, sear the beef in peanut oil for 3 minutes per side until golden brown. Remove beef from the pan and set aside on a plate.
  • Allow the pan to cool for 1 to 2 minutes. Then, add butter to the warm pan and let it melt in the remaining heat. Turn the heat to medium and place the mushrooms in the pan, cut-sides down. Sauté until they are light brown, which should take 3 to 4 minutes. Flip the mushrooms and keep cooking until they turn golden, about 2 to 3 minutes more. Next, add the onion and season with salt. Cook the onion until it turns slightly golden, approximately 3 to 4 minutes.
  • Start by pouring the aromatic sake into the pan and let it simmer until it reaches a boiling point, using a wooden spoon to scrape off the flavorful browned bits at the bottom. Next, introduce a harmonious blend of chicken broth, miso, maple syrup, and ketchup, allowing the flavors to mingle as you bring it to a gentle simmer. Finally, add the richly browned beef, earthy mushrooms, and any juices they've released, combining all the elements for a delectable dish.
  • Lower the heat to a gentle simmer, cover the pot, and cook until the meat is fork-tender, which will take about 2 to 3 hours. Remember to turn the beef halfway through the cooking time.
  • Mix in the green onions, chile pepper, and vinegar. Cover and simmer for an additional 5 minutes. Taste and season to perfection.
