Indulgent Japanese braised pork, perfect for busy days. Transfer from stove to slow cooker for a hassle-free meal.
Ingredients:
  • 1 teaspoon minced ginger
  • 1 tablespoon canola oil
  • 5 pounds pork butt (shoulder roast) cut into 2-inch slices
  • 2 tablespoons minced garlic
  • 2 cups water, more if needed
  • 0.33333334326744 cup soy sauce
  • 0.33333334326744 cup brown sugar
  • 0.75 cup white (shiro) miso
Instructions:
  • In a large Dutch oven, heat canola oil over medium-high heat until hot. Sear pork slices until well browned on both sides. Remove pork slices from the Dutch oven. Add garlic and ginger, cook until fragrant for about 30 seconds. Pour in water, soy sauce, brown sugar, and miso paste. Bring to a simmer while scraping the bottom of the pan to dissolve caramelized juices.
  • Place the pork in a pot and add more water if needed to cover the pork with the sauce. Reduce the heat to medium-low, cover, and simmer for 3 hours until the pork is tender and the sauce thickens.
