Spicy pink pinquito beans cooked with savory pork in a smoky sauce - a delicious Santa Maria-style dish.
Ingredients:
  • 0.5 cup water
  • 1 pound dry pink beans (such as pinquito)
  • cold water to cover
  • 2 slices peppered bacon, diced
  • 0.5 cup diced smoked ham
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 0.25 cup ketchup
  • 1 tablespoon sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon chipotle chile powder
  • 1 pinch dried oregano
Instructions:
  • In a large container, soak pink beans in cool water, making sure they are covered by several inches. Allow them to sit for 8 hours to overnight. Drain the beans.
  • In a stockpot, cover drained beans with cold water. Bring to a gentle simmer and cook until just tender, approximately 1 hour and 45 minutes.
  • While the beans simmer, sizzle bacon in a large saucepan over medium heat until cooked through but not crispy, for 5 to 7 minutes. Mix in ham; cook until heated through, about 1 minute. Stir in garlic until fragrant, around 1 minute. Mix in tomatoes, 1/2 cup water, ketchup, sugar, dry mustard, paprika, chili powder, salt, chipotle chile powder, and oregano. Bring to a simmer, lower heat to low, and let flavors meld for 30 minutes.
  • After draining the beans, save 1 cup of the cooking liquid. Mix the beans with the saved liquid and tomato mixture in the stockpot. Simmer, then lower the heat and cook, stirring occasionally, until the beans are tender and the mixture thickens, approximately 30 minutes.
