Try Chef John's scrumptious scrambled eggs with cherry tomatoes, feta cheese, and basil for a tasty breakfast anytime!
Ingredients:
  • 3 large eggs
  • 1 pinch red pepper flakes
  • 9 cherry tomatoes, halved
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon very thinly sliced fresh basil leaves
  • olive oil
  • 1 pinch sea salt
Instructions:
  • Combine eggs and pepper flakes in a bowl, then fold in tomatoes, feta, and basil.
  • In a sizzling nonstick skillet, pour in the egg mixture and let it cook undisturbed for 5 seconds.
  • Stir the egg mixture until the eggs are scrambled and softly set, which should take about 30 seconds. Transfer to a plate and sprinkle with sea salt for an added touch of flavor.
