Chef John's irresistible summer berry crumble: loaded with blackberries, raspberries, and blueberries, topped with a buttery crumble.
Ingredients:
  • 2 cups all-purpose flour
  • 0.75 cup white sugar
  • 0.75 teaspoon baking powder
  • 0.25 teaspoon fine salt
  • 0.75 cup frozen unsalted butter
  • 2 large egg yolks
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar, or as needed
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 0.33333334326744 cup white sugar
  • 2 teaspoons cornstarch
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 pinch cayenne pepper
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • Prepare the crumble by mixing flour, sugar, baking powder, and salt in a large bowl until well combined. Grate frozen butter into the mixture, pausing to gently incorporate until evenly coated.
  • Combine egg yolks and vanilla in a bowl and mix with a fork until well incorporated. Next, add 1 teaspoon of vinegar and mix briefly. Use your hands to finish mixing, gently squeezing until clumps form while keeping the mixture mostly dry. If necessary, add more vinegar. Set the crumble aside.
  • Prepare the luscious filling by gently folding together a medley of blueberries, raspberries, and blackberries. Sweeten the mix with sugar, thicken it with cornstarch, and add brightness with a splash of lemon juice, zest, and a hint of cayenne pepper. Stir until all ingredients meld seamlessly, ensuring the sugar and cornstarch dissolve into a harmonious blend.
  • Spread half of the crumble mixture evenly on the bottom of a 2-quart baking dish, pressing it down firmly with the back of a cup. Next, spread the berry filling over the crumble layer. Finally, sprinkle the rest of the crumble mixture over the berries, making sure to leave some clumps for added texture.
  • Bake in the preheated oven for 40-45 minutes until the top is perfectly golden and the berry filling bubbles. Allow to cool to room temperature for about 30 minutes before serving.
