Indulgent tiramisu made with espresso, Marsala wine, ladyfingers, and creamy mascarpone custard.
Ingredients:
  • 0.5 cup brewed espresso
  • 3 tablespoons Marsala wine, divided
  • 2 large eggs, separated
  • 2 tablespoons white sugar
  • 0.75 cup mascarpone cheese
  • 0.5 teaspoon vanilla extract
  • 10 ladyfinger cookies, broken in half, or more as needed
  • 1 tablespoon cocoa powder
  • 0.5 ounce dark chocolate, grated
Instructions:
  • Combine rich espresso with 2 flavorful tablespoons of wine in a shallow bowl. Let it sit for later use.
  • In a large bowl set over simmering water, vigorously whisk egg yolks, 2 tablespoons plus 1 teaspoon sugar, and 1 tablespoon wine until the mixture thickens and turns pale yellow and creamy, about 5 to 6 minutes.
  • Whisk mascarpone, vanilla, and salt into the warm mixture until smooth.
  • In a glass or metal bowl, whip egg whites until stiff peaks form. Test by lifting your beater straight up for sharp peaks. Gently fold half of the egg whites into the mascarpone mixture, then fold in the rest.
  • Spoon a generous amount of mascarpone mixture into a serving glass. Dip 2 cookie halves quickly in espresso mixture until coated, then place them on top of the mascarpone in the glass.
  • Layer the mascarpone mixture in the glass, then alternate dipping ladyfinger halves in espresso mixture and arranging them vertically inside the glass. Place two dipped ladyfinger halves horizontally on top of the mascarpone. Fill the glass to the brim with the remaining mascarpone mixture. Repeat the layering process for the second glass.
  • Chill both glasses wrapped in plastic for at least 8 hours or overnight. Unwrap and sprinkle cocoa and grated chocolate on top before serving.
