Chef John's Ultimate Mashed Potatoes

Indulgent holiday mashed potatoes, rich and creamy with generous butter, a decadent seasonal delight.
Ingredients:
  • 3.25 pounds russet potatoes
  • 1 pound unsalted European-style butter
  • salt and freshly ground black pepper to taste
  • 0.25 cup hot milk
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • Peel and quarter potatoes. Soak in cold water, rinse, and drain. Boil in generously salted water until potatoes are soft, about 20-25 minutes.
  • Allow the butter to soften at room temperature while the potatoes are cooking.
  • Thoroughly drain the potatoes and place them back in the pot. Mash them over medium-low heat with a potato masher until smooth. Season with salt and pepper, then mix in ¼ of the softened butter until it melts into the potatoes.
  • Add an additional 1/4 of the butter and whisk until it almost disappears. Whisk in the rest of the butter in 2 parts as previously directed; this will result in fluffy and creamy potatoes.
  • Gently blend in warm milk until fully mixed. Stir in cayenne and extra salt to taste. Enjoy while hot.
