Chef John's mini Philly cheesesteaks: The ultimate crowd-pleaser for game day!
Ingredients:
  • 2 tablespoons butter, or as needed
  • 2 tablespoons all-purpose flour, or as needed
  • 1 cup cold milk
  • 2 ounces shredded provolone cheese, or more to taste
  • 1 pinch ground nutmeg
  • 1 pinch cayenne pepper
  • salt to taste
  • 1 (12 ounce) skirt steak
  • 3 tablespoons olive oil, divided, or as needed
  • 0.25 cup water
  • 0.33333334326744 cup diced onion
  • 0.33333334326744 cup diced sweet peppers
  • 2 baguettes, or as needed, cut into 48 1/2-inch thick slices
  • 0.25 cup shredded provolone cheese, or as needed
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare baking sheets by lining them with aluminum foil.
  • Create the sauce by melting butter in a skillet over medium-high heat. Whisk in flour and cook for about 1 minute until it's pale and the flour taste cooks off. Slowly whisk in milk until thickened, about 3 to 6 minutes. Stir in provolone cheese, nutmeg, cayenne pepper, and salt until cheese melts completely. Set aside.
  • Season the steak generously with a blend of salt and black pepper for a burst of flavor in your mini cheesesteaks.
  • In a skillet over medium-high heat, sizzle the steak in 1 tablespoon of olive oil until slightly firm and pink inside, turning occasionally, for about 5 to 7 minutes. Then, transfer the steak to a plate.
  • Place the skillet back on the stove and add water, allowing it to come to a boil while using a wooden spoon to scrape off the flavorful browned bits from the bottom. Pour this liquid from the skillet over the steak. Let the steak cool to room temperature, then dice it and transfer both the meat and any juices from the plate to a large bowl.
  • In a sizzling skillet, cook onions and peppers in 1 tablespoon of oil until they soften and turn slightly translucent, approximately 5 minutes. Mix this flavorful blend with the beef in the bowl, then season generously with salt and pepper.
  • Place bread slices on baking sheets, then generously drizzle with 1 tablespoon of olive oil. Flip slices over so the oiled sides are facing down. Spread each slice generously with cheese sauce, top with beef mixture, and sprinkle with provolone cheese.
  • Bake in the oven until golden brown and the cheese is gooey, about 12-15 minutes.
