Cherry coconut bites: a delightful blend of sweet summer flavors.
Ingredients:
  • 60g butter
  • 210g caster sugar
  • 190g plain flour
  • 30g cocoa powder
  • 45g desiccated coconut
  • 245g cherry jam
  • 36 drained morello cherries
  • 130g shredded coconut
Instructions:
  • 1. Preheat oven to 180°C. 2. Grease 36 mini muffin pans with 1 1/2 tablespoons (30ml) capacity each. 3. Using an electric mixer, cream together butter and half of the sugar in a medium bowl until pale and creamy. 4. Add 1 egg and beat until fully incorporated. 5. Mix in the flour, cocoa powder, and desiccated coconut until well combined.
  • Divide mixture evenly into the pans and press dough with your fingers to cover the base and halfway up the sides. Bake in a preheated oven for 8-10 minutes until cooked through. Allow to cool for 5 minutes before serving.
  • Spread the jam evenly in each pan and garnish with a cherry. Mix shredded coconut, remaining sugar, and remaining egg in a medium bowl. Spoon coconut mixture over each dessert. Bake in the oven until golden, about 5 minutes. Cool in the pan, then transfer to an airtight container.
