Indulge in a delightful cherry coconut slice for a relaxing afternoon treat.
Ingredients:
  • Melted butter, to grease
  • 100g butter, at room temperature
  • 215g (1 cup) caster sugar
  • 150g (1 cup) self-raising flour
  • 105g (1 1/4 cups) desiccated coconut
  • 315g (1/2 cup) cherry jam
  • 1 x 680g jar morello cherries, drained on paper towel
  • 130g (2 cups) shredded coconut
Instructions:
  • Preheat the oven to 180°C. Grease a 20 x 30cm lamington pan by brushing it with melted butter. Line the base and two long sides with non-stick baking paper, leaving some to hang over the edges.
  • In a medium bowl, use an electric beater to whip together the butter and 100g (1/2 cup) of sugar until pale and creamy.
  • Crack in 1 egg and mix until just combined. Fold in the mixed flours and 20g (1/4 cup) of desiccated coconut using a wooden spoon. Transfer the batter into the prepared pan and even out the top.
  • Place in a preheated oven until golden brown, about 20 minutes. Allow it to cool for 10 minutes before serving.
  • Spread a layer of jam evenly over the base. Evenly scatter the cherries on top of the jam. In a medium bowl, combine shredded coconut, remaining sugar, eggs, and desiccated coconut. Spoon this mixture evenly over the cherries. Bake in the oven for an additional 20 minutes until golden and set. Allow to cool completely, then cut into squares before serving.
