Cherry and watermelon mimosas recipe

Impress guests with vibrant Cherry Watermelon Mimosas - a taste of summer in every sip!
Ingredients:
  • 120g canned cherries
  • 55g caster sugar
  • 1 tsp vanilla bean paste
  • 1.2kg chilled watermelon, peeled, chopped
  • 125ml liqueur
  • 750ml btl sparkling rosé, chilled
  • Watermelon wedges, to serve
  • Crushed ice, to serve
Instructions:
  • In a saucepan over medium heat, gently simmer cherries, sugar, vanilla, and 1/3 cup (80ml) water until sugar dissolves, stirring occasionally. Let it cook undisturbed until cherries are tender and syrup thickens, about 5 minutes. Allow it to cool before using.
  • Blend cherry mixture in a blender until smooth, then chill in the fridge in a jug.
  • Blend the chopped watermelon in a clean blender until smooth. Strain the mixture through a fine sieve into a large jug, discarding the solids. Chill in the fridge.
  • Pour cherry puree into the serving glasses, then add watermelon juice, liqueur, and rosé on top. Garnish with watermelon wedges and ice before serving.
