Cool cherry watermelon salad with tangy lime-mint syrup. Optional twist for added flair.
Ingredients:
  • 200g fresh cherries, halved, stones removed
  • 1 small seedless watermelon
  • 120g raspberries
  • 62.50 ml mint leaves
  • 55g caster sugar
  • 60ml lime juice
  • 2 sprigs fresh mint
  • 1/2 tsp vanilla bean paste
  • 60ml water
Instructions:
  • For the lime & mint syrup, in a saucepan, mix together sugar, lime juice, mint sprigs, and vanilla. Pour in water. Heat over low heat and stir occasionally for 2 mins until sugar dissolves. Increase heat to high, let it boil for 2 mins until slightly thickened. Take off heat, discard mint, add cherries, stir well. Let it cool for 30 mins to enhance flavors.
  • Slice the watermelon into 1cm-thick slices using a large sharp knife. Cut star-shaped pieces using 3cm and 6cm pastry cutters. Arrange on a platter with raspberries and mint. Top with cherries and syrup. Serve promptly.
