Cherry and watermelon mimosas recipe

Impress guests with refreshing cherry watermelon mimosas, perfect for summer festivities.
Ingredients:
  • 120g canned cherries
  • 55g caster sugar
  • 1 tsp vanilla bean paste
  • 1.2kg chilled watermelon, peeled, chopped
  • 125ml liqueur
  • 750ml btl sparkling rosé, chilled
  • Watermelon wedges, to serve
  • Crushed ice, to serve
Instructions:
  • In a saucepan over medium heat, simmer cherries, sugar, vanilla, and 1/3 cup (80ml) water until sugar dissolves, about 2 minutes. Let cook undisturbed for 3 minutes, until cherries are tender and syrup thickens. Allow to cool before serving.
  • Blend the cherry mixture until smooth in a blender, then chill in the fridge in a jug.
  • Blend the chopped watermelon in a clean blender until smooth. Strain the mixture through a fine sieve into a large jug, discarding any solids. Chill in the fridge.
  • Pour the cherry puree evenly into the serving glasses. Drizzle with the watermelon juice, liqueur, and rosé. Serve with watermelon wedges and ice on the side.
