Cherry Bacon Jam with Thyme and Cloves

Crispy bacon, caramelized onions, and sweet cherry preserves create a delectable condiment.
Ingredients:
  • 1 pound Smithfield® Thick Cut Bacon
  • 1 large onion, finely diced
  • 1 (10 ounce) jar cherry preserves
  • 0.25 cup light brown sugar
  • 0.5 cup red wine vinegar
  • 1 pinch ground cloves
  • 0.25 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 1.5 teaspoons fresh thyme leaves
Instructions:
  • In a large heavy-bottomed skillet over medium-low heat, crisp the bacon, turning as needed. Remove bacon and let cool on paper towels. Keep 2 tablespoons of bacon fat in the pan, then increase heat to medium and cook onions for 8-10 minutes until soft and translucent.
  • Combine preserves and sugar in a pan over medium heat until sugar has dissolved and mixture is hot, stirring occasionally. Stir in vinegar, cloves, salt, and pepper, then cook for 8-10 minutes until thickened and syrupy, stirring occasionally.
  • Finely chop the bacon while the jam is reducing. Stir in the bacon and thyme, cooking until reaching your desired consistency. Allow the jam to cool before transferring to airtight jars for up to two weeks of storage.
