Indulgent ricotta toast with cherry tomatoes and bacon on thick crusty bread - perfect for any meal!
Ingredients:
  • 2 slices bacon
  • 0.66666668653488 cup diced cherry tomatoes
  • 1 tablespoon shredded Parmesan cheese
  • 2 leaves fresh basil, minced
  • salt and ground black pepper to taste
  • 2 thick slices crusty bread
  • 2 tablespoons olive oil
  • 0.25 cup ricotta cheese
Instructions:
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until crisp and evenly browned, for about 10 minutes. Drain the bacon on paper towels, crumble when cooled, and set aside.
  • Mix together vibrant cherry tomatoes, savory Parmesan cheese, aromatic basil, and a sprinkle of salt and pepper in a small bowl.
  • Preheat a cast iron grill pan over medium-high heat. Brush both sides of bread slices with olive oil. Grill the bread in the pan until it has grill marks and is toasted, about 2 to 3 minutes per side.
  • Spread the toasted bread generously with creamy ricotta cheese. Spoon over the flavorful tomato mixture, then generously sprinkle with crispy bacon. Cut each toast in half for perfect, shareable portions before serving.
