Transforming surplus cherries into a delightful savory dish to switch it up from the usual sweet treats of cherry season.
Ingredients:
  • 1 pound cherries, pitted
  • 1 cup cider vinegar
  • 0.5 cup rice vinegar
  • 1 large onion, chopped
  • 1 Granny Smith apple - peeled, cored and chopped
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 2 tablespoons minced fresh ginger
  • 2 tablespoons Chinese five-spice powder
  • 1 teaspoon salt
  • 0.25 teaspoon ground nutmeg
Instructions:
  • In a large pot, combine cherries, cider vinegar, rice vinegar, onion, apple, white sugar, brown sugar, ginger, five-spice powder, salt, and nutmeg. Simmer over medium-high heat, then cover and simmer for 1 hour, stirring occasionally. Uncover and simmer to desired consistency. Chill before serving.
