Delicious Cherry Chutney complements poultry, ham, or pork dishes, perfect for enhancing cold meat sandwiches.
Ingredients:
  • 500g cherries, halved and pitted
  • 250.00 ml red wine vinegar
  • 90.00 gm brown sugar
  • 125.00 ml Craisins
  • 1/2 cinnamon stick
  • 2 tsp freshly grated ginger
  • 3 whole cloves
Instructions:
  • In a heavy-based saucepan, mix all ingredients and stir over low heat until sugar dissolves. Increase heat to medium-high and bring to a gentle boil. Cover, lower heat, and simmer for 45 minutes.
  • Uncover the pan and simmer the mixture uncovered over low heat for 10-15 minutes until it thickens slightly, stirring occasionally to prevent sticking. Be vigilant towards the end of cooking time.
  • Allow the mixture to reach room temperature, then place it in a glass or ceramic bowl. Cover with a lid or plastic wrap, and store in the refrigerator for up to 2 weeks.
