Experience the delectable flavors of a classic French dessert.
Ingredients:
  • Melted butter, to grease
  • 1 x 425g can stoneless black cherries (John West brand), drained
  • 150g (2/3 cup) caster sugar
  • 2 eggs
  • 2 egg yolks
  • 125ml (1/2 cup) light sour cream
  • 40.00 ml plain flour
  • Icing sugar, to dust
  • 160ml (2/3 cup) thickened cream
Instructions:
  • Preheat your oven to 200°C. Brush a 20cm cake pan with melted butter to lightly grease it. Place cherries in the pan and sprinkle with 1 tablespoon of sugar.
  • In a large bowl, use an electric beater to whip together remaining sugar, eggs, and egg yolks until they are pale and fluffy. Add the sour cream and beat until everything is well combined. Sprinkle the flour over the mixture and beat until fully incorporated. Pour the batter over the cherries and bake in the oven for 20 minutes or until fully cooked. Finish by dusting with icing sugar before serving.
  • Whip the thickened cream until soft peaks form.
  • To plate, spoon the mixture onto individual plates and sprinkle with icing sugar. Enjoy with a dollop of cream on the side.
