Ingredients:
- 1 cup semisweet chocolate chips
- 0.5 cup rum
- 0.25 cup light corn syrup
- 3 cups vanilla wafer crumbs
- 1.5 cups chopped pecans
- 1 cup confectioners' sugar
- 24 red candied cherries, halved
Instructions:
- Combine the chocolate chips, rum, and corn syrup, stirring until melted and well blended.
- Combine vanilla wafer crumbs, pecans, and 1/2 cup of confectioners' sugar. Pour the chocolate mixture over it and mix until well combined.
- Form mixture into 1-inch spheres, coat with the remaining confectioners' sugar, gently press a cherry half into the center of each cookie. Let them sit in an airtight container for a few days to enhance the flavor.
