Create a festive cherry rum cocktail using fresh summer cherries, perfect for gifting or enhancing holiday dishes.
Ingredients:
  • 240g (1 1/2 cups) fresh cherries
  • 375ml (1 1/2 cups) dark rum
  • 100g (1/2 cup) caster sugar
  • 1 vanilla bean, split, seeds scraped
Instructions:
  • In a jar with a tight-fitting lid, combine cherries, rum, sugar, and vanilla bean. Gently shake to dissolve the sugar. Let it sit for 2 weeks to infuse.
  • Pour the liquid into a clean, sterilized bottle.
