Delicious cherry tarts infused with sweet sherry, perfect for a bite-sized treat.
Ingredients:
  • 60g unsalted butter, softened
  • 1 egg
  • 100g (1 cup) almond meal
  • 120g (2/3 cup) pure icing sugar
  • 20.00 ml sweet sherry
  • 12 thawed frozen cherries, halved
  • 300g (2 cups) plain flour
  • 160g chilled butter, coarsely chopped
  • 70g (1/3 cup) caster sugar
  • 2 egg yolks
  • 40.00 gm chilled water
  • Plain flour, to dust
Instructions:
  • For the pastry, combine flour, butter, and sugar in a food processor until they look like fine breadcrumbs. Add egg yolks and water and process until mixture just holds together. Knead the dough on a floured surface until smooth, shape into a disc, wrap in plastic, and chill in the fridge for 1 hour.
  • Roll out the pastry on a lightly floured surface to a 3mm thickness. Cut out 24 discs using a 7cm-diameter round pastry cutter. Place the pastry discs in the holes of two 12-hole patty pans.
  • Preheat oven to 180°C. Beat butter in a bowl with an electric beater until light and fluffy. Mix in the egg until well combined. Add almond meal, icing sugar, and sherry, stirring until fully mixed. Spoon the mixture into pastry cases and garnish with cherries.
  • Place in the preheated oven for 18 minutes or until fully cooked. Then, allow it to cool on a wire rack before presenting on a cake stand or platter to serve.
