Cherry tarts, perfect warm or chilled, topped with whipped cream and shaved chocolate for a decadent treat.
Ingredients:
  • 1 (14.1 ounce) package of 2 refrigerated pie crusts
  • 1 pound fresh sweet cherries, pitted
  • 2 tablespoons minute tapioca
  • 1/3 cup sugar
  • 1/2 teaspoon almond extract
  • pinch of salt
  • whipped cream (optional)
  • grated chocolate (optional)
Instructions:
  • Roll out each pie crust on a lightly floured surface until large enough to cut six 5 to 5-1/2-inch circles for the tart crusts.
  • Gently place each dough circle into a 4-inch tart pan with a removable bottom, ensuring it fits snugly. Press the dough against the sides, then prick the bottom with a fork to prevent bubbling. Trim off any excess dough by rolling a rolling pin across the pan tops.
  • Chill the tart crusts in the refrigerator for about 45 minutes until well chilled and keep them refrigerated until needed.
  • Heat your oven to a toasty 400 degrees F (200 degrees C).
  • Combine cherries, tapioca, sugar, almond extract, and salt in a large bowl. Distribute cherry mixture evenly among the tart pans taken out from the fridge and place them on a baking sheet.
  • Bake until cherries are tender and the crust is golden brown, about 25-30 minutes in the preheated oven.
