Quick and easy cherry tarts with just 5 ingredients, ready in 25 minutes!
Ingredients:
  • 24 Mini Tart Shells
  • 400g cherries, pitted, halved
  • ¼ cup (55g) caster sugar
  • 5.00 gm cornflour
  • ¼ cup (60ml) thickened cream
  • Extra cherries, to serve
Instructions:
  • Preheat the oven to 180°C. Arrange tart shells on a baking tray and bake until they are a light golden color, about 10 minutes.
  • In a saucepan, mix cherry and sugar over medium heat until fruit releases its juices and sugar dissolves, about 5 minutes. Combine cornflour and 2 tsp cold water in a bowl, then add to cherry mixture. Cook for 2 minutes until mixture boils and thickens slightly. Remove from heat and evenly distribute the filling among the tart shells. Chill in the fridge for 1 hour before serving.
  • Beat the cream in a medium bowl with an electric mixer until stiff peaks form. Spoon or pipe the cream mixture onto the tarts and garnish with extra cherries.
