Quick and easy 5-ingredient dinner ready in 30 minutes! This high-protein dish features haloumi, chorizo, and eggs with a spicy kick.
Ingredients:
  • 250g haloumi, cut into 1cm-thick slices
  • 250g chorizo, sliced
  • 3 x 400g cans cherry tomatoes
  • 750.00 ml chopped kale
  • Dukkah, to serve
  • Crusty bread, to serve (optional)
Instructions:
  • In a large frying pan over high heat, heat the oil until shimmering. Cook the haloumi for 2-3 minutes on each side until golden-brown. Transfer to a plate and set aside.
  • Sear chorizo in the pan until slightly browned, then lower heat. Mix in tomatoes, season, and cook for 5 minutes. Finally, gently fold in kale.
  • Create 4 wells in the tomato mixture with the back of a spoon. Carefully crack 1 egg into each well. Add the haloumi back to the pan, cover, and cook for 6-8 minutes until the egg whites are cooked through but the yolks are runny. Sprinkle with dukkah and serve with bread, if desired.
