Sell these irresistible caramels at the school fair - they'll be gone in no time!
Ingredients:
  • 337.50 gm white sugar
  • 378.75 gm double thick cream
  • 45g butter
  • 89.38 gm honey
  • 8.80 gm vanilla extract
Instructions:
  • Prepare a 20cm x 30cm lamington pan by greasing and lining the base and sides.
  • Combine all ingredients in a sturdy saucepan. Cook over medium heat, gently stirring with a wooden spoon until the sugar has dissolved. Increase heat to high and allow the mixture to come to a boil without stirring.
  • Simmer on low heat for 15 minutes or until the caramel reaches 118°C to 121°C on a sugar thermometer. Test by dropping a bit into cold water; caramel is ready when pliable and slightly sticky. Repeat boiling and testing as needed.
  • Pour the mixture into the prepared pan. Allow it to rest, uncovered, at room temperature for 3 to 4 hours until it sets.
  • Transfer the caramel onto a cutting board. Cut it into pieces using a warm, sharp knife. Wrap the individual caramels in cellophane, twisting the ends to seal them.
