Chewy Turtle Snack Cake

Indulge in a rich chocolate snack cake with gooey caramel and crunchy pecans on top.
Ingredients:
  • 3/4 cup sugar
  • 6 tablespoons butter, softened
  • 2 oz sweet baking chocolate, melted, cooled
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla
  • 6 tablespoons buttermilk
  • 3 tablespoons water
  • 2 eggs
  • 1/2 cup butter
  • 1 bag (14 oz) caramels, unwrapped
  • 1 can (5 oz) evaporated milk
  • 1 bag (11.5 to 12 oz) semisweet chocolate chunks (2 cups)
  • 1/2 cup chopped pecans
Instructions:
  • Preheat the oven to 350°F and generously grease the bottom and sides of a 13x9-inch pan with shortening, then lightly dust with flour.
  • In a spacious bowl, whip together sugar and 6 tablespoons of butter using an electric mixer on high speed for about 3 minutes until fluffy, scraping the bowl occasionally. Add melted chocolate, flour, baking soda, salt, vanilla, buttermilk, water, and eggs. Mix on medium speed for 2 minutes, occasionally scraping the bowl. Transfer the mixture into the pan.
  • Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  • In a 2-quart saucepan, melt 1/2 cup butter, caramels, and evaporated milk over medium heat, stirring constantly until smooth. Pour over warm cake, then top with chocolate chunks and pecans. Bake for an additional 20 minutes until the chocolate is melted. Allow to cool fully for about 1 hour and 30 minutes.
